Judging by the post title, this should be a good one! Ha ha.
Alex's cousin Trey arrived last night. Alex was so nervous because this is his first time having any family or friends come visit him in the almost 4 years he's lived here. He was so anxious, we ended up at the airport almost 2 hours early!
I, of course, had to snap some pictures of their reunion. These two have grown up practically as brothers, so they are SUPER close.
Here they are hugging it out. Trey snuck a kiss on the cheek in for Alex's Mom, Becky.
I also made them pose so I can send this to Becky. She has strict "requests" (aka, demands!)
We stopped and grabbed a quick bite to eat and headed home. It will be fun having some of Alex's family around so I can hear all those embarrassing stories of them growing up together. It's off to the North Shore later today to start our adventure (I still need to post some pictures of MY family's visit too!).
On top of all the visiting, I will be making Trey some of my NEW beyond awesome cookies. Alex ate them ALL. Alex doesn't even really like sweet stuff (Gasp!...Whhaaaattt???!). That's saying a lot if he ate ALL of the cookies.
My recipe is pretty basic, but it's the PREPPING, that makes them so tasty!
Here it is:
2 C. flour
1/2 tsp baking soda
1/2 tsp salt
3/4 C. butter-MELTED (don't question it, I promise!)
1 C. brown sugar
1/2 C. granulated sugar
1 Tbsp. vanilla
1 egg
1 egg yolk (this helps them to be chewy!)
1 1/2 C. Milk Chocolate Chips (or Semi-Sweet if you want those)
Get all your stuff together. It makes it easier to have it all out so you're not rummaging through your cabinets.
Sift together your flour, baking soda, and salt. If you don't have a sifter (or are too lazy to get it out to use..uh um, guilty!), just use a whisk.
In a separate bowl, combine the sugars with the melted butter. Not almost melted, not softened, ENTIRELY MELTED. Again, don't worry. It will all work out!
After sugars and butter are thoroughly mixed, add egg, egg yolk, and vanilla. Once that's combined, add dry ingredients. Then chips, of course!
Once all of that is mixed, cover it up, and stick it in the fridge for about an hour. Feel free to take a few tastes, I always do. As horrible as it is for you, cookie dough is my weakness. And brownie dough too. Eeekk!
After an hour of being in the fridge, and preheating your oven to 350 degrees, go ahead and start baking them. I personally LOVE my cookie scoop. It never fails to make uniform sized cookies and it's so much easier to not have to deal with a regular old spoon.
Bake for 11-13 minutes, until the outer edges are just barely browning up. Remove them from cookie sheet and set them on a cooling rack (Lord, thank you for cooling racks. You make excellent bacon too!). After cooling, immediately hide them from husbands and small children...Hide them from yourself if possible. They are THAT good (yes, I like to toot my own horn on this one. They are amazing!).
